At 7:15 on a recent morning, Dhiraj Gurung, a 10-year cook at Dot's Diner on 28th Street in Boulder, used one hand to crack the first two eggs of his shift, dropping the wobbly packages of yellow fat and clear protein into a non-stick sauté pan that had been heating over a flame for 10 minutes.

Overheard on Lincoln Avenue, Steamboat Springs' ever-bustling main street: "God, every single store here sells the same (stuff)." Sure, some of the low-rent Steamboat shops peddle gimmicky sunglasses, dated fleece jackets, cheap henna designs and clearance T-shirts with high-altitude jokes.
